apple and onion pork chops
ingredients
porkchops:
- 4 pork chops
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1/2 cup of olive oil
apple compote:
- 2 red apples, sliced thin
- 1 whole red onion, sliced thin
- 1/2 cup of bacon, thin sliced & chopped up
- 1/4 cup olive oil
- 1/2 cup sauvignon blanc or riesling wine
- 1/2 stick of butter, melted
instructions
apple compote:
- heat 1/4 cup of olive oil in a sauté pan on high until it’s smoking
- add your onions, reduce heat to medium, and cook until light brown, stirring frequently
- add your bacon, and cook on medium until the bacon begins to brown, stirring frequently
- add your apples, and stir frequently for two minutes to let the flavors blend
- add your wine and continue stirring occasionally until alcohol is cooked off
- reduce heat to low, and add your butter.
- stir occasionally for five minutes, and keep on low while you make the porkchops
pork chops:
- in a large sauté pan, heat your olive oil on medium-high, allow to warm
- sprinkle your pork chops generously with salt and pepper on both sides
- add your porkchops to the warmed oil, and allow to brown for 5 minutes
- flip the porkchops and cook the second side for an additional 5 minutes
- remove from pan, place on plate, and scoop a few heaping spoonfulls of the apple compote (“juice” included) on top of your porkchops
- serve with potatoes, applesauce, or whatever you’d like
